I am determined to be happy, and the most satisfying way I can think of is through good works. Fortunately, the Winter Solstice season approaches (she says, two days before the Autumn Equinox) and I have a lot to do. [livejournal.com profile] spinrabbit extra-generously gave me Panforte Clif Bars, which got me thinking about my yearly fruitcake project. I want to try to make four recipes total, and it being Jamaica's 50th anniversary of Independence, my thought is to replace the Emily Dickinson's Black Cake with the Jamaican Independence Fruit Cake. My other fruitcake recipes are listed here. Come to think, I should do a poll on this -- next post.

Winter Solstice/Yule/Hannukah/Kwanzaa/Christmas is always a whirlwind. I love it, though. It's my favorite time of the year. I hope you get everything done that you want to get done.

Your fruitcake recipes sound amazing. Fruitcake gets a bad rap.

As an aside, I once received a little fruitcake for Christmas from a co-worker and left it on the kitchen counter while I went out with a friend. When I got back, my cat Sheba (see icon) had eaten the whole thing and was bouncing off the walls on an epic kitty sugar high. She loved baked goods!

I always let myself get lost in these long lists of what I feel obligated to do, and what I think I'm expected to do, and I completely miss out on the fun of what I actually do.

The best candied peel I know of comes from Nuts.Online aka nuts.com but they sell it in one-pound bags.

curious.. would using the juice of the fruit still bother you? Say making lemon pound cake with the lemon juice? or orange flavored chicken? things where you could juice the fruits and then freeze for later use?
