Whew. I'm not even half done and I'm exhausted; but then I did the samplers first, because those take the longest. I think I have a system down now, yay!
What works:
What doesn't:
And now, and ridiculously early, to bed. Tomorrow, more fruitcake!
What works:
- Wrapping the fruitcakes up as batches, on the impermeable plastic cake boards. That turned out to be efficient and effective, and even using both waxed paper and plastic wrap as double layering it saves time.
- The stacking cooling racks. Why didn't I buy these before?
- The current no-alcohol recipe. It actually keeps. I don't know how, but it does.
- I can make fondant that actually works!
What doesn't:
- I need at least one small offset spatula. Spreading frosting with dinner knives is not cutting it.
- The samplers need to be sent in the next-largest-size box; the smallest box is too small.
- I need to keep waxed paper on hand for this.
And now, and ridiculously early, to bed. Tomorrow, more fruitcake!
