(pacifist becomes a god-slayer, harem, magical combat); Un-Go (post-apocalyptic, detective, supernatural forces)
All of the above are excellent examples of their genres and should be considered standard bearers in their way.
You might want to look at some fluffier things as well, especially since there's no way you'd have time to watch all of these shows all the way through, but I suggest giving each of them a look.
