Assuming I can get to the grocery store before Whuffle needs the car this weekend, my son and I will be making cheese. Tonight, I'll try waking up some of cheese cultures I have in the freezer by treating them like a yogurt starter. My problem with past batches of cheese appears to have been with the cultures that came with the kit I've been using. The cultures are either dead or don;t have enough active cells to impact the flavor of the cheese. A larger starter will, hopefully, result in better cheddar.
